Nut butter chia cookies

1 cup Peanut butter or Almond (I did a batch with both yummy)

3/4 cup coconut sugar (you can use brown) Note I mix egg and sugar together and let sit for 5 min

1 egg

1 tsp vanilla extract

1 cup quinoa flour (I get it  at Bulk barn)

3/4 tsp baking soda

1/2 tsp baking powder

2 Tbsp chia seeds

optional 1/2 cup chopped nuts I decorated with sliced almonds or put a piece of dark chocolate.

Beat it all together and scoop dough into i inch balls.  Bake at 375 for 10-12 min let sit for 5min then move to cooling rack…keep in fridge for a week or freezer for 1 month
