Honey Almond Cookies
Ingredients:
1 cup raw unsalted whole almonds, lightly toasted
1 1/4 unbleached whole-wheat pastry flour
1 cup unbleached all-purpose flour (I used a combo of Spelt, brown rice and amaranth flour)
1 tsp baking powder
1/2 tsp sea salt
2/3 cup natural, organic liquid honey
1/4 agave nectar
1/3 coconut butter, melted
1/4 cup unsweetened applesauce
1/4 ground flaxseed
1 large egg
1 tsp vanilla extract
1/4 sliced almonds, toasted (for garnish)
Method:
- Ground raw almonds in food processor. Dump into large mixing bowl. Add flours, baking powder and salt. Mix well to combine.
- In another medium bowl mix honey, agave nectar, butter, applesauce, flaxseed, egg and vanilla. Mix well.
- Combine wet and dry ingredients.
- Cover dough and place in refrigerator for one hour to allow dough to set.
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.
- Use a 1 Tbsp measuring spoon to scoop dough and shape into balls. Place cookie on sheet and press down with thumb.
- Bake each sheet of cookies for 12-15 minutes.
- Remove from oven and cool. Place almond slivers on top of cookies.
