High Powered Pancakes

Ingredients

  • 1/3 C oats
  • 1 scoop whey protein
  • 2tbsp ground flax seed
  • 1/2 C pasteurized egg product/egg whites
  • 1 C frozen strawberries
  • 1pkt stevia  ( I used a little maple syrup)
  • 1/4 tsp vanilla extract

Instructions Put the oats, whey, flax seed, and egg whites in a blender and blend until smooth. Pour onto a griddle and cook until brown on both sides. While the pancakes are cooking, put frozen strawberries in a small bowl and microwave for 2 min. Mash or blend the strawberries and add stevia and extract. Serve over the pancakes.  I quadrupled the recipe and then froze them on parchment paper in a container in the freezer…we really enjoyed them.

Yield: 1 serving Preparation Time: 5min Cooking Time: 10min
