Whole wheat Flax cookies…and they are so good!
INGREDIENTS
1/2 cup whole flax seeds
1 1/2 cups buttermilk (or skim milk….I used 1% with 1 tbsp lemon juice)
2 cups whole wheat flour
1/2 cup of ground flax seeds
1 cup rolled oats
1 tsp of each baking powder and baking soda,
1/2 tsp of each sea salt, cinnamon ( I put more cinnamon)
1/4 tsp of each nutmeg and mace ( had no mace used all spice)
1 cup olive oil based margarine or cup of canola oil
cup of sucanat ( still haven’t found this so substituted brown sugar till I find it)
2 eggs
2 tbsp pure vanilla
2 cups of chopped raw unsalted almonds
1/2 cup dark sultana raisins ( I soaked these in hot water and may have a put a little more)
PREPARATION
- Preheat oven at 375’F
- Soak flax seeds in buttermilk at room temperature for 2 hours
- Put all dry ingredients in a bowl except raisins and almonds and combine till blended
- put margarine/oil beat in sucanta/sugar until fluffy and add eggs one at a time and beat well add vanilla and mix
- Combine dry and liquid ingredients till blended add Raisins and almonds mix again
- Prepare a sheet of parchment paper or Silpat or spray lightly with cooking spray
- Use large spoon drop balls on cookie sheet
- Bake 15 min. ( it took the full-time)
